Ginger Chicken Stir Fry!  So Yummy!!!

I'm a busy mom.  I have a family of eight.  I work from home and homeschool three of my six kids.  I want healthy meals, but also meals that don't have me in the kitchen for hours!  Anyone else???  I am betting that many want to eat healthier but it seems all the quick and easy options are not really good for us, right?

Here is a recipe I think you'll like because not only is it healthy but it's fast!  You can use the main ingredients (chicken and veggies) and mix up the spices for a totally different dish!

I made this last week and EVERYONE love it!  I felt good about feeding it to my family and I was only in the kitchen about 45 minutes!  This makes 4 servings, I actually tripled it for my large brood! 

Here is what you need:

  • 1/3 cup Tamari
  • 2 Garlic (cloves, minced)
  • 1 tbsp Ginger (peeled and grated) If you're an essential oil user like me, you can also use Young Living's Ginger Vitality oil--so good and it will only take 2 drops!)
  • 1 tbsp Coconut Oil
  • 1 1/4 lbs Chicken Breast (sliced into cubes)
  • 1/2 Yellow Onion (diced)
  • 3 stalks Celery (sliced)
  • 1 Red Bell Pepper (diced)
  • 2 cups Broccoli (chopped into florets)
  • 4 cups Kale Leaves (chopped

    **I also had a little bit of chicken broth on hand to deglaze my pan as needed.  

    Here's how to prepare it:



  • Mix together tamari, garlic and ginger in a jar. Put on a lid and shake well. Set aside.
  • Add coconut oil to a large frying pan and place over medium heat. Add chicken and yellow onion. Sauté for 8 to 10 minutes or until chicken is mostly cooked through. Add in celery, red pepper and broccoli. Sauté for another 5 minutes. Pour in sauce from jar. Stir well to mix. Once everything is well combined, turn off the heat and stir in your kale. Continue to stir just until kale is wilted.
  • Plate stir fry. Garnish with sesame seeds and hot sauce if you like. Enjoy!
